Note that ‘bucatini’ means big ‘hollow’ spaghetti, a kind of pasta invented by the composer Rossini (the reason of that ‘hollow’ was to give the sauce a chance to get inside, not just arounf). ‘Alla Matriciana’ only means from Amatrice, a little town not so far from Rome.
(There are papers and experiments showing that a splash of this sauce can reach a speed much greater than 100 km/h, given the peculiar structure of these bucatini.)
